These are Gluten Free and Dairy Free (Vegan)!!! You can use regular chocolate chips but I always use Enjoy Life dairy free chocolate chips when I’m baking.
These take about 5 minutes to make and they hit the spot when your wanting some cookie dough but don’t want the stomach ache or guilt. Kids love them too!
1 cup Oat flour. I use Trader Joes Gluten Free Oats and blend them in my Vitamix blender to make it flour consistency)
1 scoop protein powder (I use THIS in chocolate or vanilla, they have seasonal ones that are amazing too-the coffee flavor was soooo good in this recipe)
1/2 cup peanut butter (any nut butter will work)
1 tbsp. ground flaxseed (optional)
1/4 cup maple syrup or sweetener of choice
Add mini chocolate chips to taste (I use Enjoy Life mini chocolate chips)
- Mix all ingredients except the chocolate chips into a bowl and mix well. It takes a minute so be patient. I used a fork to mash the peanut butter in and mix it really well. Once mixed, add your chocolate chips. It may not look like its going to hold together well, but once you use your freshly washed hands to form them into balls, they will stick.
- Form dough into balls and place in the fridge
PROTEIN POWDER: I always use THIS ONE because its Non GMO, Vegan and tastes amazing. It's the smoothest vegan shake i have ever had. A lot of them can be chalky.
