Thanksgiving Ratatouille


Who doesn’t love ratatouille? And I am not just referring to the adorable movie with the rat that cooks! Even those who aren’t crazy about vegetables can enjoy this dish and for those of you who do love vegetables, like myself, you will be in heaven. I am making this dish for Thanksgiving this year, not only does it taste rich and delicious, it looks beautiful too. This is one of my favorite dishes to bring to a party because it is so beautiful to look at. I’m bringing it to Thanksgiving  this year!

I hope you enjoy this dish as much as I do.

As you can see from my photo, I used the big eggplant instead of the skinny  ones so I cut them thin and folded them, it still came out great! I cut myself on the mandolin while slicing the veggies and had to pur a finger condom on, why are finger condoms so funny?!




  • 4 zucchinis
  • 2 eggplants
  • 1 yellow onion
  • 2 tomatoes

For Sauce:

  • 4 peeled tomatoes (or you can use a 15 oz. can of diced tomatoes)
  • 3 cloves garlic
  • 1/2 onion
  • 1 tbsp. lemon juice
  • 1 tbsp. dried oregano or parsley (I use both)
  • salt and pepper to taste (I use about 1 tsp. salt and 1/2 tsp pepper)


  1. Preheat the oven to 375º
  2. Add the ingredients for the sauce into a blender or food processor and blend until smooth.
  3. Pour 3/4 of the sauce in the bottom of the skillet and smooth it out.
  4. Slice your freshly washed veggies in very small pieces. Be careful for your fingers!! (mandalins  come in handy here.) 
  5. Alternate the veggies while layering them around the skillet (see photo). If your veggies aren’t all the same size, you can fold them! Then drizzleRatatouille
  6. Lay a piece of parchment over the top of the skillet and bake for 1 hour.
  7. If you want an even more browned top, you can broil on high for the last 5 minutes uncovered.

Note: I use my iron skillet, If you don’t have one, just use a round baking dish. If you don’t have a round baking dish, you can use a square one and line them up in rows! Get creative. Feel free to use different veggies as well (potato, sweet potato, and bell peppers, are lovely in this dish too!)
