Low Fat Vegan Nacho Recipe

My son is such a picky eater, and he is never fooled by my vegan cheeses! But this vegan nacho cheese was his favorite so he poured it all over his nachos and loved every bite. My husband is now insisting that I make these nachos at least once a week, I guess you could say this is a new family fav and it’s super low fat! Healthiest nachos in town. I put links for the brands that I used if you are interested (I always wonder what brands people use in their recipes because sometimes it makes a difference for the taste). I hope you enjoy this low fat vegan nacho recipe the way my family and I did. What’s your families favorite vegan meal?

 

INGREDIENTS:

Beans:

1 can Refried Black Beans

1/3 cup Salsa Verde

 

“Meat”

2 cups brown rice (you could use white rice, brown rice, quinoa or another grain that you love)

1 taco seasoning packet (I used this) It’s a little spicy but amazing. If you add tomato paste or ketchup to it (a tbsp. or 2) it makes it more mild.

 

Vegan Nacho Cheese

1 cup carrots

2 cups potato

1/3 cup water

1/2 cup nutritional yeast

1/2 tsp. garlic powder

1/2 tsp. onion powder

seasoned salt to taste add until you like the flavor

*note- you can add turmeric to make the color more orangey but it isn’t necessary

 

Low Fat Tortilla Chips

8-10 organic corn tortillas

1 lime

salt flakes (I use these)

 

DIRECTIONS:

  1. preheat the oven to 350 degrees
  2. Boil your rice until its ready, then in the last 5 minutes add the seasoning packet. A little trick is to add some ketchup or tomato paste to make it more of a sticky rice. I added ketchup for the kids because it was a little spicy.
  3. cut the tortillas into chip shape, squeeze some lime and sprinkle with salt flakes. Bake them for 10-15 minutes
  4. mix beans and salsa verde in a pan and simmer on low until heated through
  5. peel and boil the carrots and potato. Once boiled, put them in the blender (you could use a hand blender or food processor instead) with 1/3 cup of the water. Add the rest of the ingredients and blend well. Add seasoned salt last and add slowly until you get a flavor you love.

Plate it: Put the chips down, then some beans and rice, top with nacho cheese

Optional add ins:

-Guacamole- mash up an avocado, squeeze lime, add salt. If its just for me and my husband I add onions and tomato. The kids never like the onions in it!

-Salsa- Tomato, onion, cilantro, and lemon or lime

-Corn- roasted corn is so good on these
